How to cook tofu curry.
The ingredients mentioned below use standard measuring cups and spoons
Ingredients to make the tofu curry
250g block of firm tofu cut into 1″ cubes
1/2 teaspoon of red chilli powder
1 teaspoon of curry powder
1/4 teaspoon of salt to season
1/4 teaspoon of pepper
1/3 cup oil(to fry the tofu and make the curry)
1 large medium-sized onion sliced fine
A sprig of curry leaves(substitute with a bay leaf)
1 tablespoon of garlic(about 3 cloves minced)
1″ piece of cinnamon
2 medium-sized tomatoes chopped(can substitute with 1 tablespoon of tomato paste)
2 green chillies(substitute with banana peppers or bell pepper)
1 tablespoon of curry powder
1/4 teaspoon of turmeric powder
1 teaspoon of red chilli powder(increase to 1/2 teaspoon more to increase heat)
1 cup of coconut milk
Salt to season
Method
Place the tofu over a flat surface. lay a few paper kitchen towels or a clean clean towel over the tofu and press down gently to remove extra moisture.
Cut the tofu into 1″ cubes.
Place the tofu cubes in a bowl, and add curry powder, red chilli powder, pepper and salt.
Toss with the spices and set aside for 3-5 minutes.
Add oil to a medium-sized frying pan.
Once the oil is warm, add the tofu cubes into the pan, and spread them about in a single layer.
Cook each side for at least 3-5 minutes or until golden brown.
Avoid turning them constantly, instead give each side a few minutes to turn golden before flipping them over.
This should take you 10 to 12 minutes.
Once done, transfer the crispy tofu cubes onto paper towels to absorb excess oil.
Place the same frying pan or skillet over low fire and add the remaining oil.
Add onions, garlic, curry leaves, green chillies(substitute with banana peppers or bell peppers), tomatoes(substitute with 1 tbsp of tomato paste, and cinnamon piece.
Saute until onions turn soft.
Add turmeric, chilli powder, and curry powder. cook for 3 minutes.
Pour in the coconut milk and cook until the gravy changes colour and thickens.
This should take 10 minutes over low medium heat.
Add the fried tofu into the coconut milk sauce, and continue to cook over low medium heat.
Taste and season with salt.
Slow simmer until the coconut gravy thickens and lightly coats the tofu.
Taste and adjust seasoning.
