Place a large, frying pan or skillet on the stove over low-medium heat.
Heat the pan for 20 to 30 seconds and pour in the oil or butter.
Add the sliced onions and the dried red chillies, and fry them for 1 minute.
Add the raw peanuts to the pan with the onions and the dried red chillies.
Maintain the low-medium heat and spread the peanuts evenly over the pan.
Mix and combine continuously to avoid burning the roasting peanuts.
Depending on the heat used, the peanuts will take about 10 to 12 minutes.
As you roast the peanuts, season them with salt and red chilli powder.
Taste and check if the peanuts are cooked, you will notice if the peanuts are still raw or roasted by the taste.
As you gently combine and stir, the dried red chillies and curry leaves will turn crispy and the peanuts will turn golden brown and they will release their aroma.
