Let me not waste time and start with these delicious, Pan-fried chicken wings that you can cook up with just a few ingredients you might probably have in your kitchen now.

My kids love this devilled chicken and if they could have it every day they’ll not complain.

I’m sure you are spoiled with choices of various chicken wing recipes out there and it does become difficult to choose with all those sticky, Asian inspired to barbecued, grilled deliciousness staring back at you from the screen.

This chicken wing recipe is slightly different because it closely follows the Sri Lankan devilled chicken recipe on the blog.

These easy slightly pan-seared chicken wings are easier to prep and give you everything you look for in a quick appetizer. serve it to that friend who loves spicy food.

Sri Lankan chicken devil wings. what’s that?

To anyone not familiar with the term devilled, it’s referred to any super spicy dish that you come across that literally makes you puff out and sweat due to the levels of spiciness.

Obviously, we Srilankans are very comfortable with this type of heat, in fact, we love it and term anything that brings out beads of sweat on our foreheads as tasty.

The huffing and puffing, the mad dash for a glass of water or spoon of Sugar are kind of fun and worthwhile when you just have a taste of this devilled pan-fried chicken.

Experimenting with the devil wings.

Like every other dish introduced on the blog, I love the simplicity of this dish.

I did a bit of experiment as well, I took a portion of this chicken winglets and added a tiny amount of Wasabi, wanting to see if I could up the level of heat because funny guy has a dish he spices up with Wasabi and you can taste the distinct flavor of it.

I wanted to see if this works with the chicken.

I now know why Wasabi tastes better in its raw paste form. What I found out is that no matter how much of the paste you add the heat kills that flavor of the Wasabi, there is 0% of its flavor left.

Utensils and appliances needed.

Chopping board and knife.
A large bowl to marinate the wings.
A wok to pan sear then combine wings with the sauce and other ingredients.

What goes with the devil wings.

Serve as a snack or appetizer.
With your favorite salad.
With an Asian noodle recipe or fried rice.

How many devil chicken wings for 5 individuals?

An average person can easily consume 10-12 wings, so if you have a few heavy eaters I would probably make 70-80 wings to be on the safe side.

But before you take these numbers into account, you might want to take into consideration the other meat or carbs served, depending on the spread you are going to make for your party, you can probably reduce it to 60.

Pan-fried spicy chicken wings(Sri Lankan devil wings).

1/2 a cup of Oil

1 kg of Chicken wings(this would roughly be about 34-38 wings)

Salt to season

1/2 teaspoon Turmeric

2 tablespoon of Ginger Paste

3-4 large Onion sliced( keep a few of these Onion rings to mix in later)

3 Green chillies split

3 large Tomatoes with 2 finely chopped (1 for garnishing)

3 tablespoons of Chilli flecks

1/2 cup of Tomato Ketchup( if you can use the chilli sauce or hot sauce, even better)

Method

Clean and wash the chicken winglets, make sure to drain any excess water.

Add the winglets in a large bowl, add salt to season and 1/2 teaspoon of Turmeric, mix then set aside for 15 minutes.

Place pan over medium heat, pour in the oil and let the oil heat for 10-15 seconds.

Add the marinated chicken and pan fry the wings.

Toss and pan sear the winglets so they fry, not completely but just enough that you see the edges turn golden brown.

Once the chicken wings are semi-fried, transfer the fried wings to a paper towel.

Place the same pan over low medium fire, add ginger, half of the onions, green chillies and cook until the onions turn translucent.

Add the chopped tomatoes, chilli flecks, pepper and sugar. Mix all ingredients well, this should take you less than two minutes. taste, add salt if necessary.

Now, pour in the Ketchup, cook for two minutes and then add the crispy pan-seared chicken wings, leave it on low simmer so the sauce thickens and coats the winglets.

Do a final taste test, remove the pan from the fire, add the raw onion rings as a garnish, combine and serve while warm.

You might want to leave a little gravy or let the gravy completely coat the chicken wings as it cooks.

Do a final taste test, remove the pan from the fire, add the raw onion rings as garnish, combine and serve while warm.
