LIME BARS WITH CONDENSED MILK(lime squares)

lime bars or lime squares, these tangy, smooth bars.

They are quick and easy to make just like our favourite lime bars.

A can of condensed milk and key lime are the main ingredients to make these creamy and tart bars.

I love making this lime bars recipe because the ingredients are always in my pantry and can be made quickly.

They can be served as a treat for the family or at parties, picnics etc.

So try out our favourite citrus-flavoured dessert bars, they are refreshing and light.

  • Make sure to blitz the graham crackers (maliban crackers) to a sandy texture. this will give you a smooth and even crust.
  • Secure parchment paper with a dab or brush of butter.
  • You can use the food processor to make the lime filling but using a whisker and bowl works well. make sure to combine all the ingredients well.
  • While making the lime filling- add the recommended amount of lime juice. should you find the lime squares are not tart enough, simply add a teaspoon more until you are satisfied with the taste.
  • While testing the lime, make sure not to zest the white part of the lime, the pith. it is extremely bitter and will ruin your lime bars.
  • Let the lime bars(lime squares)chill for 1 or 2 hours before cutting them into squares.

  • 2 large bowls to make the crumb and filling separately
  • 8″ x 8″ square baking pan
  • Baking paper/parchment paper.

RECIPE DIFFICULTY-EASY

The ingredients mentioned below use standard measuring cups and spoons.

1 and 1/2 cups of graham cracker crumbs(about 14 graham crackers, substitute with maliban square biscuits)

1/3 cup of granulated sugar

1/2 a cup of butter, melted

3 egg yolks

1 can of small condensed milk(14oz)

2 teaspoons of lime zest

1/3 cup of key lime juice

Line an 8 x 8 square baking pan with parchment paper.

Dab or brush a little butter to secure the paper to the pan. set aside.

Place the graham crackers(or maliban crackers)in a food processor.

Pulse for a few seconds until you have a fine crumb.

Transfer the crumb into a medium-sized bowl, and add the room-temperature butter and granulated sugar.

Combine the crumbs, sugar and butter well. the result would be a wet and moist crumb.

Add the crumb into the baking pan, and spread evenly.

Press the crumb into the bottom of the pan tightly to make a crumb layer.

Preheat oven to 170C.

Place the baking pan in the preheated oven and bake for 12 minutes.

Remove from the oven and let it cool for 15-20 minutes.

In a medium-sized bowl, pour in the condensed milk, add the egg yolks and whisk well to combine.

Add the lime zest and juice to the condensed milk. gently whisk for a minute or two.

Once the lime filling is whisked, you’ll notice the filling is thicker than it was.

Preheat oven to 170C

Pour the lime filling over the prebaked crust, and spread the filling evenly.

Bake for 15 minutes.

Once baked, remove and let the lime bars cool, refrigerate and chill for 1 hour.

Cut the key lime bars into squares and serve.

  • 3 egg yolks
  • 1 can of small condensed milk(14oz)
  • 2 teaspoons of lime zest
  • 1/3 cup of key lime juice

Instructions
