If you’ve followed the previoust two recipe posts this week, then you know the last recipe ends with this Yoghurt marinated chicken tacos. A fast-food themed meal I made for the terrible four.
With a few changes in the ingredients, namely the amount of heat and sweetness, these Tacos can also be changed into a super hot adult version. since I’m feeding teens, a tween and a 5-year-old, I’ve had to amp up the sweetness on both the sauce and cabbage slaw so that they can enjoy without having to reach a glass of water with every bite.
It took me 1 and a half hours to create all the components for the meal, everything you see was made from scratch except for the store-bought frozen french fries and the tortillas to make the Tacos.
I’ll try to add as many details as I can so that everything in this meal comes together smoothly and just in time for the kids to enjoy after school.
But before moving on with today’s post, let me do a recap on this weeks recipes that you’ll need(click on the image and you’ll be directed to the recipe).We started the week with a Tamarind pulp based hot Barbecue sauce.
Followed by a zesty Pineapple cabbage slaw.
And finally we move on to today’s recipe.
Recipe- yoghurt marinated grilled chicken tacos with Pineapple Cabbage slaw.
Please make sure to read the recipe instructions carefully to avoid mistakes.
Notes To make the following meal, I started preparing the chicken, they were marinated and stored in the refrigerator first.
Then I made the Tamarind Barbecue sauce and let it cool, followed by the Pineapple-Cabbage slaw which I wanted to keep as fresh as possible which meant that the slaw had to be tossed together just before serving. so I sliced, grated the Cabbage and Carrot then refrigerated them, the Pineapple was cleaned but not sliced.
Once I’ve done all of the above, I started with the Yoghurt marinated grilled chicken.
The following chicken strips were grilled using a stove top grill pan.
Ingredients
5-7 medium-sized chicken strips
3 tablespoons of Yoghurt
Salt to season
1/2 teaspoon of red chilli powder
A pack of Tortillas
Method
To make the Yoghurt marinated chicken tenders
Once all the elements for the meal is prepared as mentioned on notes.
In a medium-sized bowl mix in the Yoghurt, chilli powder, salt and add the chicken tenders into the bowl. leave it to marinate for 30 minutes in your fridge.
while the chicken is marinating, you can go back to preparing the other elements of this meal.
Once the chicken is marinated for 30 minutes, place a grill pan over medium-high heat and brush oil over the pan.
Still maintaining medium-high heat, take out the chicken tenders, shaking out the excess yoghurt, place them on the pan and grill 2-3 minutes each side or until the chicken tenders are cooked.
Maintain medium-high heat to avoid the tenders sticking to the pan.
Once all the chicken tenders are grilled, leave them to cool.
Assembling the Tacos
Place grilled chicken tenders in a tortilla, add a spoon of Cabbage-Pineapple slaw then drizzle the tamarind barbecue sauce and serve with lime wedges a good sized portion of fries.
