Beginner’s tips on making
chocolate pudding from scratch.
- The quantity given below will give you 4 cups of chocolate pudding, you can double the ingredients to make twice the amount but I would suggest starting with the following amounts first.
- Once you’ve mixed the dry and wet ingredients, make sure to strain the pudding mixture.
- To thicken the pudding mixture, you will need to cook the mix. do this over low-medium heat so that you will reach the correct consistency. do not rush this part of the process but constantly stir and keep the flame low.
- Have the pudding cups and cling film ready. once the pudding is cooked to the correct consistency you will have to work quickly to pour the mixture into the cup and then lay the cling film on the surface of the pudding, this would avoid a thin chocolate layer forming which will cause you to lose the smooth, creamy texture.

Ingredients.
Ingredients mentioned below use standard measuring cups and spoons.
2 cups of milk
1/3 cup sugar
2 tablespoon of cocoa powder
4 teaspoon of cornstarch
2 tablespoon of Nutella
3 large egg yolks separated from the white
1 teaspoon vanilla
Salt to taste
1/4 cup crushed cashew nuts(optional for garnishing)
Method
Gather all the ingredients.
Have the cups ready to pour in the chocolate pudding. you can use 4 ceramic ramekins or smaller aluminum molding cups as I have done.
Add sugar(1/3 cup), cocoa powder(2 tbs), salt, cornstarch(4 tsp)into a bowl.
Combine these dry ingredients well with a whisk.
Pour 1 cup of the milk to the dry ingredients in the bowl.
Add Nutella(2 tbs)to the mixture and continue to combine well.
Use a whisk to combine the Nutella until the chocolate pudding mix is smooth.
Once you have smooth thick chocolate syrup, pour in the remaining milk gradually and combine the milk into the chocolate mix.
Whisk the egg yolks before adding it to the chocolate mixture, mix well. pour in the vanilla. continue whisking until slightly frothy.
Strain the pudding mixture through a sieve into a medium-sized cooking pan.
Place the pan over the low-medium fire and cook the chocolate mix, continue to stir while it thickens. 8-10 minutes.
Pay attention to the heat as you want to maintain steady heat and not overheat the mixture while you mix it with a spoon.
You will notice the chocolate mixture thickening, continue to cook until Nutella chocolate pudding mix coats the back of the spoon in a thick smooth layer.
Switch off the fire and cook with the remaining heat for another minute while stirring.
Immediately pour the Nutella chocolate pudding mixture into the serving cups.
To avoid any thin milky layer forming on top of the pudding, it’s important to cover the pudding with cling film. this has to be done as soon as you pour in the chocolate Nutella mixture into the cups.
So cut out cling film, slightly larger pieces than the size of the cups.
Place it on top of the pudding mixture(this is where it gets a little tricky) and gently press down in the middle so it touches the surface of the pudding.
Once the cling film is in place, transfer the cups to the refrigerator for 4-5 hours until it sets.
Once the pudding sets, remove the cling film with care, garnish with cashew(optional) bits and serve.
