Egg noodles, juicy shallow fried chicken, a mix of stir-frying vegetables and the star ingredient that brings everything together, is the sweet and spicy lo mein sauce.
Combine all these ingredients to make a wok full of delicious chicken lo mein noodles and you have a restaurant-style, take-out meal to serve as dinner.
Kids especially love it because of the crispy chicken and the thick lo mein sauce smothering the egg noodles.

The Lo mein noodle sauce.
The sweet and slightly spicy sauce is made up of sesame oil, soy sauce, oyster sauce, hoisin sauce and a few other regular pantry ingredients you’ll find in the kitchen.
I add extra tablespoons of red chilli flakes to give the stir-fried noodles more heat.
Make sure you make a little extra so you can also use the sauce for your next stir-fried dish.
Variety of vegetables you can use for chicken lo mein.
I’ve used spring onions, paprika and carrots for my Chinese noodle recipe.
You can also add the following vegetables to make it healthier and wholesome.
Snow peas, broccoli, beans, sliced bok choy, mushrooms, bean sprouts, fresh or frozen peas are some of the veggies that work well with this stir-fried noodle recipe.
Type of noodles to use for lo mein.
The best type of noodle would be egg noodles.
If you are wondering where to buy the egg noodles, they can be found in the Asian ingredient sections or where all the noodles, pasta are kept.
The egg noodle has a chewy texture and is able to absorb the sauce well, making the noodles extra tasty.
The other reason for using egg noodles is because it won’t break into smaller pieces like other types of noodles when you have to spend a few minutes really combining the lo mein sauce, the veggies and the crispy chicken.
But in case you don’t find egg noodles, you can substitute with ramen noodles.
Tips on making a pot of Chicken lo mein just like your favorite Chinese restaurant.
- Make sure to taste and make the lo mein sauce correctly by balancing out the flavors(read above notes on the sauce).
- The second important ingredient to make the best chicken lo mein noodle is the type of noodles you use, make sure to use egg noodles(see above notes on the type of noodles).
- Pay extra attention and time combining the ingredients thoroughly.
- Use two wooden spoons to mix and the chicken, veggies and the sauce into the egg noodles. you might have to season the lo mein with salt while mixing to balance the taste out. as mentioned above, make a little extra lo mein sauce to bring the noodle recipe to your liking.
- Instead of boneless chicken, you can also use chicken breasts cut into smaller pieces.
- If you are tempted to add an extra pack of egg noodles to feed a few extra mouths. DON’T.
This would just result in a bland pot of chicken lo mein, you can only do this by making and adding extra lo mein sauce and key ingredients.

Ingredients
Ingredients mentioned below use standard measuring cups and spoon.
For the chicken.
700g of boneless chicken cut into 2-inch strips(use chicken breast for texture variation)
3 tablespoons of soy sauce
1 tablespoon of minced ginger
2 tablespoons of garlic(3 cloves)
2 tablespoon of sesame oil
For the lo mein sauce.
2 tablespoons of brown sugar
4 tablespoons of dark soy sauce
4 tablespoons of oyster sauce
3 tablespoons of hoisin sauce
1 tablespoon of sesame oil(you can also use regular vegetable oil)
2 tablespoons of red chilli flakes
1 tablespoon of minced ginger-garlic paste
Vegetables
2 tablespoons of regular oil
3 medium-sized carrots cut into thin strips
2 medium-sized onions sliced fine
250g of spring onions chopped
2 large Paprika cut into thin slices
Method
How to marinate the chicken.
Clean, cut and place the chicken slices in a bowl(700g).
Add the soy sauce(3 tbs), sesame oil(2 tbs), ginger(1 tbs), garlic(4 cloves) and combine well with the chicken and set aside for 15 minutes.
How to prepare the egg noodles.
Place a pan over medium fire and bring the water boil, add the egg noodles to the boiling water.
lower heat to medium, check the package instructions, should the cooking time mention 12 minutes then cook for 10 minutes and remove egg noodles form the stove. drain and set aside.
Once the egg noodles slightly cool, use a tong to separate the noodles and avoid the strings sticking together, this should be done when the egg noodles are still slightly warm.
How to make the lo mein sauce.
In a smaller bowl add the sugar(2 tbs), dark soy sauce(2 tbs), oyster sauce(4 tbs), hoisin sauce(2 tbs), sesame oil(1 tbs), chilli flakes(2 tbs), garlic(1 tbs)and combine well. set aside.
How to cook chicken lo mein.
Place a wok over the low-medium fire, heat the oil and shallow fry the marinated chicken until golden brown and crispy. 5-7 minutes, when the chicken slices are cooked, transfer it to a bowl.
Add oil(2 tbs), heat and then add the carrots cook for 3 minutes.
Add the paprika, onions to the wok, cook for 3-5 minutes or until the onions and paprika are slightly soft while tossing the veggies to cook evenly.
Add the chicken and combine it with the vegetables for 3-5 minutes over low-medium fire.
Add the cooked egg noodles, combine with the vegetables and chicken for 3 minutes.
Add the sauce and toss everything together over low fire for 5 minutes until combined well(make sure you use two wooden spoons to combine the egg noodles so the sauce spreads out evenly. check the taste and season as per your need.
Add the spring onions and mix with the noodles. serve warm.
