For this week’s chicken-themed recipe, I’m making a popular game day, tailgating, party finger food out there. the sweet, sticky, mustard and smoky flavors and the crispy crunch of the chicken can be addictive while you are glued to your favorite sports program.

So make sure you make a lot of these drumlets because I guarantee you that these babies will be over in minutes.

It’s also a copy-cat recipe that most fast food restaurants out there sell for an outrageous price and the portion they give you for that price is ridiculous. 

Just once, go ahead and make these barbecue drumlets at home, once you’ve made them, you are going to feel a bit silly about the times you bought these sticky barbecue side-dish from fast food restaurants.

Can I use wings instead to make these honey-mustard barbecue drumlets?

Yes, you can, most restaurants sell these as wings, the reason I’m using drumlets for this recipe is just my personal preference.

Workflow to make sticky barbecue sauce honey mustard chicken?.

There are four steps to this recipe 

1/coating the drumlets in a flour and seasoning.

2/making the sticky sauce.

3/deep-frying the chicken.

4/mixing the drumlets with the sauce.

Can I use any type of store-bought barbecue sauce to make the honey-mustard chicken drumlets?

Yes, use your favorite barbecue sauce, especially the ones with the smoky flavor and a hint of spice, I was actually experimenting and making my own barbecue sauce but couldn’t get that smoky flavor, mine was a bit sweeter than the store-bought barbecue sauce. still, if I get it right, you’ll see the recipe posted on the blog. until then store-bought barbecue sauce works fine.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

To make the sauce

1 cup store-bought barbecue sauce

1/4 cup honey

2 teaspoon mustard paste

For the chicken

700g of chicken drumlets(with skin)

1 and 1/2 cup all-purpose flour

1 teaspoon salt(season as per your need)

1 teaspoon pepper(season as per your need)

3-4 cups of oil to fry the drumlets

Method

To make the sticky barbecue honey mustard sauce.

Into a pan, add the barbecue sauce, honey, mustard, salt and combine well, then place the pan over very low heat. cook the sauce for a minute and immediately remove from fire. check the taste of the sauce and season according to your preference, you can add a bit of pepper as well. set aside.

Frying the chicken

Wash and drain the chicken drumlets, pat dry with paper towels.

Transfer the drumlets to a large bowl, add flour, salt and pepper.

Combine all the ingredients in the bowl, make sure that the drumlets are covered in dry batter and set aside for 12-14 minutes.

Place a deep pan over medium heat and pour in the oil, heat the oil for a few minutes until it reaches the correct temperature. to check if the temperature is right, drop a piece of flour, should it float and sizzle then start frying the drumlets in small batches.

Fry the drumlets for a few minutes until they turn golden in color. make sure you maintain a steady oil temperature, at no point, should the oil smoke as this would leat to the drumlets burning.

Place the fried drumlets in a plate covered in paper towels and continue frying the drumlets until you are done. 

Transfer the deep-fried drumlets to a large bowl and pour in the barbecue-honey mustard sauce and gently but thoroughly, coat the drumlets with the sauce.

Serve warm.
