Ingredients mentioned below use standard measuring cups and spoons.
To fry
500g of Ash plantain
1/4 teaspoon turmeric
1/2 teaspoon of red chilli powder
Salt to season
Oil to fry(1 to 1 and 1/2 cup, you can use the air fryer for a healthier option)
To make the salad
2 medium-sized onion cut into very thin slices
2 green chillies chopped fine(reduce if you are sensitive to spicy food and remove it completely from the salad, substitute with sweet paprika powder))
2 medium-sized tomatoes chopped
1 teaspoon red chilie flakes
Lemon juice of 1/2 a lime
Method
How to clean and prepare the Ash plantain for the salad.
Wash the green plantain(500g) and cut the top and bottom parts off.
Peel the green, thick skin exposing the white flesh of the raw Plantain.
Cut the Ash plantain into 1/2″ cubes and place them in a large bowl.
Season with salt and turmeric(1/4 tsp)and red chilli powder(1/2 tsp). Combine well.
How to fry the Ash plantain for the salad.
Pour oil into a frying pan and gradually bring the oil to a frying temperature(low-medium heat).
Add an ash plantain cube to check on the oil temp, once it starts to float and gently fry, the oil is ready.
Maintain this heat and avoid the oil from smoking.
Fry the Ash plantain(cooking plantain)in small batches and fry them until golden brown.
This would take 3-4 minutes per batch.
Use a slotted spoon to scoop the fried ash plantain and place them over a kitchen paper towel.
How to make the salad.
Add the fried Ash plantain into a bowl.
Add the sliced onions(2 medium sliced), green chilies(2 chopped, reduce if you are sensitive to spice or substitute with sweet paprika powder), tomatoes(2 medium chopped).
Add the red chilli flakes(1 tsp), salt to season and mix.
Once mixed, squeeze half a lime onto the Ash plantain salad and combine.
Serve with rice and curry.
