500g of boneless chicken breasts(skin off)cut into 1″cubes
1/4 teaspoon salt
1/4 cup of teriyaki sauce
Ingredients to make the teriyaki rice
6 tablespoons of oil to be used as needed
1 large onion sliced or diced
2 tablespoons of minced garlic(can substitute with 2 tablespoons of garlic powder)
1 cup of diced carrots(or vegetables of your choice, refer to tips above)
3 eggs beaten lightly
1 tablespoon of sesame oil(optional, can use any oil)
3 cups of cooked and chilled rice(refer to tips above)
1/2 a cup of teriyaki sauce
1 tablespoon of soy sauce
Salt is to be used as needed(refer to tips above).
2-3 stalks of scallions to garnish(optional)
How to make teriyaki chicken fried rice
Prep work before making teriyaki chicken fried rice.
- Make the teriyaki sauce using this recipe if you are in a rush buy the teriyaki sauce.
- Cook and chill rice. here’s how you can cook rice over a stovetop perfectly every single time.
- Place the chicken cubes in a large bowl. add salt(1/4 tsp) and teriyaki sauce(1/4 cup).
- Combine well and set aside to marinate for 30 to 60 minutes in your refrigerator.
How to cook chicken teriyaki rice
Place a wok or large frying pan over low-medium heat.
Pour in the oil(3 tbsps), once the oil is warm add the sliced onions(1 large sliced fine).
Cook for a minute or two, and then add the minced garlic(2 tbsps, substitute with garlic powder).
Cook until the minced garlic releases its aroma.
Add the marinated chicken to the pan. cook until they turn brown and crispy. this should take you 5-7 over medium heat.
Once the chicken cubes turn golden transfer to a plate.
Place the same large frying pan or wok over low-medium heat.
Pour in the oil(3 tbsps), diced carrots(or vegetables of your choice, refer to tips above).
Cook over low medium heat until the carrots and other diced veggies are semi-cooked, 5-7 minutes.
Reduce heat to low and gently push the cooked veggies into a side of the pan.
Quickly beat the eggs(3)and add into the pan of cleared space, add sesame oil(1 tbsp, optional, substitute with regular oil).
Gently scramble the egg for 2 minutes, then mix with vegetables and onions in the wok/frying pan.
Add the rice to the wok and combine the rice with the ingredients in the pan for a few seconds.
Add the rest of the teriyaki sauce(1/2 a cup)and combine well over low heat.
