I like to save this mixed vegetable rice recipe under emergency meals.
One-pot quick meals can save you tons of time while helping you feed a few hungry mouths in a rush.
I have days when things just don’t fall into place from the time I wake up to the time I hit the bed.
Despite my problems, I have to feed my family(we all do right?)my kids especially have only one thing on their mind and that’s,
“what’s for dinner?” or lunch or breakfast……
And for times like these, I usually use my short-cut meals.
And when I say short cut I mean using the least amount of ingredients.
An 8-ingredient recipe and most of them are in your kitchen pantry.
This easy rice pilaf dish only needs 8 ingredients, you can certainly add more but I’ve intentionally kept it simple and easy.
It’s why I’ve used a pack of frozen vegetables.

Making vegetarian rice pilaf with freshly chopped vegetables.
As I mentioned earlier, the reason I am using frozen vegetables is to cook the vegetarian, vegan fried rice as quickly as possible.
You will need less than 30 minutes to make this fried rice.
But you can also use fresh vegetables(carrots, sweet corn, peas) chop them and make the fried rice from scratch.
Frozen mixed vegetable rice pilaf.
Please make sure to read the recipe instructions carefully to avoid mistakes.
Ingredients
Ingredients mentioned below use standard measuring cups and spoons.
3 tablespoons of oil
2 cups of precooked rice
2-inch pandan leaf
1/2 teaspoon turmeric powder
2 tablespoon of minced garlic
2 tablespoons of soy sauce
1 teaspoon of freshly ground pepper(add more if needed)
1/3 cup water
A pack of your favorite mixed frozen vegetables or fresh vegetables cut into the desired size(carrots, beans, peas, corn).
Salt to season
Method
place a pan over the low-medium fire and pour in the oil(3tbs).
Add the pandan leaf and let it sizzle releasing its aroma. 2 minutes over low fire.
Add garlic(2 tbs), turmeric(1/2 tsp)cook until slightly tempered for 2-3 minutes.
Once the minced garlic is slightly brown add the frozen mixed veggies.
Cook over a low-medium fire for 4 minutes, add soy sauce(2 tbs) and pepper(1 tsp) cook then add 1/3 cup water to soften the mixed veggies.
Once water is completely evaporated add the rice and mix it with the veggies, taste and season with salt if necessary.
Increase heat, stir fry the rice for a minute over high heat and serve with your favorite curries.
