2 packs of soya nuggets
3 tablespoons of oil
A sprig of curry leaves
1 large onion sliced fine
3 green chillies split in the middle
1 tablespoon of minced ginger
3 medium-sized tomatoes cut into wedges
1 teaspoon red chilli powder
1 tablespoon red chilli flakes
1/2 teaspoon fresh ground pepper
1 tablespoon sugar
2 tablespoon soy sauce
1/4 cup tomato sauce(not tomato paste)
1/4 cup thick coconut milk(add 1/2 a cup if you need a little gravy)
Salt to season
Method
How to prepare the soya nuggets to cook.
In a pan, boil two cups of water, remove the pan from heat once the water is boiled and add a teaspoon of salt(1 tsp)followed by soya chunks(2 packs).
Cover with a lid and leave the soya meat for 5 minutes or until the chunks have expanded and taken the texture of tiny sponges.
Place the pan in a sink and drain the excess water until you are left with the soya chunks.
Run cold water for a few seconds through the soya to remove heat.
Take a handful of the soya squeeze thoroughly until you remove water from the soya chunks.
Be careful not to burn your hands while doing this with the remaining heat from the excess water you are squeezing out. set aside.
How to make the soya nuggets devil curry.
Place a pan over low-medium heat.
Pour in the oil(3 tbs) and add curry leaves(5-6 leaves), onions(1 large sliced fine), green chillies(3 green chillies), minced ginger(1 tbs), tomato wedges(3 medium).
Temper these ingredients until onions turn translucent.
Add the red chilies powder(1 tsp), chilli flakes(1 tbs), pepper(1/2 tsp), sugar(1 tbs).
Combine and cook over medium heat for 3 minutes.
Once you have a wet blend of spices and ingredients, add the tomato sauce(1/4 cup). soy sauce(2 tbs).
Pour in the coconut milk(1/4 cup, if you need more gravy, add 1/2 a cup).
Combine and low simmer for 3-5 minutes.
and then add the soy meat to the curry sauce.
Mix and simmer over low heat.
At this point, you can taste and add extra chilli powder, sugar to make it a little bit sweet or extra pepper or salt to suit your taste buds.
Cook until you have a stir-fry like constancy with a little gravy coating all the nuggets.

Instead of saying "2 packs of soya nuggets" it would be more helpful to mention the weight. Because, on my last visit to SL, I brought back 3 packets of soya chunks of two types, with a combined weight close to a kilo.

Hello Simon, I Haven't changed the recipe but I am adding how-to process shots/photos to all the recipes. that's about it. the 1 tablespoon of sugar should balance off 2 packs of soya meat. Did you use 1 pack? the ketchup you used, could it have been with a higher sugar content? I have another soya meat recipe on the blog which I believe doesn't have a sweet tone to it? could you have made that one previously? Please let me know so that I can make the recipe again to check if there's a mistake on my part. Regards, J

You have included tomatoes and soy sauce in the ingredients but you haven't mentioned it in the description. The tomatoes and soy sauce have being completely omitted in the making process. Is it necessary to add this? If yes, at which point in the recipe?

Hi Shaina, Thank you for letting me know of the following mistake. Have amended the recipe to show where the above ingredients are added. when time permits I will add the step by step images as well which I have already started with other recipes.
The tomatoes are added along with the onions and the soy sauce is added with the tomato sauce. Regards J
